Very vanilla

Vanilla roast chicken bake with new potatoes and tomatoes

SERVES 4

5 tbsp unsalted butter
1 vanilla pod, seeds
2 tsp fennel seeds
½ tsp chilli flakes
2 tsp balsamic vinegar
6 chicken thighs, bone in and skin on
650g new potatoes
300g large cherry tomatoes on the vine
Sea salt and black pepper

Preheat the oven to 200°C/400°F/gas mark 6. Melt the butter in a pan. Add the vanilla
