Vanilla roast chicken bake with new potatoes and tomatoes
SERVES 4
• 5 tbsp unsalted butter
• 1 vanilla pod, seeds
• 2 tsp fennel seeds
• ½ tsp chilli flakes
• 2 tsp balsamic vinegar
• 6 chicken thighs, bone in and skin on
• 650g new potatoes
• 300g large cherry tomatoes on the vine
• Sea salt and black pepper
