KENYAN feast

Cheese and chilli samosas

MAKES 12

• 220g filo pastry (12 sheets)
• 30g butter, melted
• 250g Camembert
• 4 tbsp chilli sauce or jam
• 1 egg, whisked
• Sea salt and black pepper

1 Preheat the oven to 180°C/350°F/gas mark 4. Unroll the pastry and cover with clingfilm and a damp tea towel to prevent it drying out. Peel off one sheet of filo pastry and brush the melted butter on the side that’s facing up. Take another sheet and place it on top of the first. Brush it with butter before cutting the sheets lengthways into four equal rectangles (approx. 7cm across).
