Herb sauces like chimichurri and pesto are always a winner with lamb.

 8 lamb rib chops (2 per serving)
 15ml olive oil
 5ml crushed coriander
 30ml fresh lemon juice
 a handful fresh mint leaves
 15ml red wine vinegar
 1 red chilli, finely chopped (optional)
 45ml good quality fresh basil pesto (we love Pesto Princess)
