Rib chops with pesto and mint
Herb sauces like chimichurri and pesto are always a winner with lamb.
Under R150 • Serves 4 • Preparation time: 5 minutes Cooking time: no more than 16 minutes
• 8 lamb rib chops (2 per serving)
• 15ml olive oil
• 5ml crushed coriander
• 30ml fresh lemon juice
• a handful fresh mint leaves
• 15ml red wine vinegar
• 1 red chilli, finely chopped (optional)
• 45ml good quality fresh basil pesto (we love Pesto Princess)
