MUSHROOM BURGER JAFFLE

Makes 1

• 1/2 onion
• olive oil
• 1 portobello mushroom
• salt and pepper
• 2 slices of bread
• butter
• 2–3 slices cheddar cheese
• squirt of tomato sauce

1. Heat a small frying pan over medium heat.

2. Slice the onion into rings and fry it in a little olive oil for 3–4 minutes, or until just golden at the edges. Remove from the pan and set aside.

3. Put the mushroom into the pan and reduce the heat to low.
