Mexican Beer Chili

FOR THE CHILE PASTE, TOAST:

2 dried guajillo chiles
2 dried ancho chiles
4 cups low-sodium chicken broth, divided

FOR THE CHILI, COOK:

4 strips thick-sliced bacon, diced
2 lb. bone-in pork shoulder roast, trimmed, cut into
1/2-inch pieces, seasoned with salt and black pepper

ADD:

1/2 cups diced white onions2 Tbsp. tomato paste, ground cumin, and minced fresh garlic1 Tbsp. Mexican oregano1 tsp. ground coriander
