Oysters Rockefeller Soup
Pernod [pehr–NOH] is a French liqueur that adds a slight licorice flavor to the soup.
Makes 8 servings (8 cups) Total time: 45 minutes
COOK:
4 strips thick-sliced bacon, diced
HEAT:
1/2 cups each diced onions and celery
1 dried bay leaf Salt to taste
STIR IN:
2 Tbsp. all-purpose flour1 tsp. minced fresh garlic1/2 tsp. white pepper5 cups chopped fresh spinach1 cup chopped fresh parsley1 cup oyster liquor (supplement with clam juice chicken broth)1/3 cup2 cups half-and-half2 cups shucked oysters, chopped and divided
