NUTRITIOUS & DELICIOUS!

CELERING LASAGNA

In place of lasagna sheets, try using celeriac for an extra-nutritious dinner dish.

Preparation time: 30 minutes Cooking time: 1 hour 20 minutes

SERVES 4-6

■ 3 tbsp extra virgin olive oil, divided
■ 1 small onion, diced
■ 3 cloves garlic, chopped
glass dry white wine
■ Pinch caster sugar
■ 2 tins chopped tomatoes
■ 1 large celeriac
■ 400g/14oz spinach
■ 1 small leek, thinly sliced
■ 250g/8oz mozzarella balls, sliced
■ Salt and pepper to taste

FOR THE WHITE SAUCE

■ 75g/2½oz plain flour
■ 75g/2½oz butter, cubed
■ 750ml/1¼ pint milk
■ A good grating of nutmeg

Heat 2 tbsp oil in a pan over medium heat. Add the onion, cook for 10 minutes. Add garlic and cook for a further 5 minutes. Deglaze with the wine, add the sugar and cook until the liquid has evaporated. Add in the tomatoes and simmer for about 20 minutes. Season with salt and pepper.
