BAKED POTATOES WITH RED CABBAGE TUNA SALAD

Crunchy red cabbage, tuna, lime and coriander make a speedy meal that’s great for a midweek option.

SERVES 4

Preparation time: 15 minutes

Cooking time: 1hr 20 minutes

■ 4 baking potatoes
■ 1tbsp sunflower oil
■ 1 small red cabbage
■ 1tin tuna
■ 4tbsp mayonnaise
■ 2tbsp sour cream
■ 1 bunch coriander, chopped
■ ½ lime, zest and juice of
■ 2 spring onions, chopped
■ Salt and pepper to taste

1. Heat the oven to 220C/200C fan/gas 7. Rub a little oil over each potato and put on the top shelf of the oven. Bake for 20 minutes, then turn
