SWEET POTATO SOUFFLÉ PIE WITH BEETROOT AND WALNUT SAUCE

For the beetroot:
baby beetroot 200 g, washed 200 g, washed 4 T to taste1 kg, peeled and diced 2 T to taste 1, roughly chopped 1 clove, chopped 100 g, plus extra for greasing 2 sprigs 1 to taste grated, to taste 2 cups 50 g, plus extra for dusting 100 g, grated 4 6 50 g 1, finely chopped 2 cloves, finely chopped 4 sprigs, leaves picked and chopped 1 cup 100 g, roasted 2 cups to taste
