What’s the best type of tripod head for me?

Q I'm buying my first decent tripod soon and I'm trying to work out which type of tripod head to go for. Should I get a pan-and-tilt head or a ball head? I am a fairly versatile photographer and shoot landscapes, portraits, wildlife, etc. Some advice on the pros and cons of each type of tripod head would be gratefully received.
