As the Culinary Ambassador to the U.S. and Canada through Peru’s official tourism authority, Chef Emmanuel Piqueras has generated a new appreciation for Peruvian cuisine in North America. Highly regarded for Sabor y Fusion, his popular food show on Latin America’s largest international cable network, Piqueras began his career at Arzak (Michelin Guide Three Stars; World’s 50 Best Restaurants). Chef Piqueras went on to lead the kitchens as Executive Chef of Andina (Portland, OR), Mixtura (Seattle, WA), Limon (San Francisco, CA),
and Panca (New York City, NY) among others. Now, as Executive Chef/Partner of Pisco Rotisserie & Cevicheria, Piqueras is excited to bring his Novoandina-style cuisine, largely influenced by his experiences growing up in Lima, to Southern California.
After the success of the flagship Pisco Rotisserie &
Cevicheria in Liberty Station, Chef Piqueras has launched its second location in Carlsbad in January 2018 alongside business partner and veteran restaurateur Sami Ladeki.
