It’s no secret that more and more people globally are looking for effective food preserve
methods. Whether it’s the rising cost of food, difficulty finding food locally, or not wanting to waste fresh produce, we can help. Water bath canning is not only a great life skill; It’s one you can also involve the whole family in for treasured memories. If you’re looking for shelf-stable food, to save existing produce, to make homemade gifts, or become an entrepreneur, let this book fire up your creativity.
To understand my journey and love of water bath canning, we must start at the beginning with my Grandma Patricia. She was born in the era during the Great Depression in the late 1930s. America had just gone through the stock market cash in the 1920s, leading to the Great Depression. Growing up in America, trading had come to a halt due to the Tariff Act by President Hoover, which contributed to the depth and length of the global Depression. A great fear loomed over most of the country, still feeling the depth of job loss,loss of savings, and homelessness. Political tears wreaked havoc throughout many countries, still reeling from WWI and leading to WWII. More disasters will hit in the years to come that will forever change and impact the world today. Families were forced to use frugal tactics and storage methods to preserve what they could longer than ever. My great-grandma, Patricia, used these methods and passed them down to her and her children. I still remember as a child being in the kitchen washing strawberries or picking beans while glass jars were being washed and prepared. As a child, I didn’t appreciate the journey from picked to jelly. I only had eyes for biscuits at that time. All food has a journey and a story to tell, one we might not even know.
My husband and I are what you call nowadays hobby gardeners. When we bought our house, we decided to try our hand at gardening. We became hooked on the love, support, and mentorship from our dear neighbors, Carol and Paul. We enjoy having a garden and tending to it all summer long. The problem soon became wasteful produce from our abundance; we couldn’t give it away quickly enough. So, once again, I sought out mentorship from Carol, who suggested we start water bath canning and put it away later to enjoy. How had I forgotten the ways of my grandma and mom and all those hot steamy kitchen days? Water bath canning is a family tradition and a staple preserving method in our household. The yield in the crop, the financial gain we save in safeguarding, and the security it brings make all our fruitful labor worth it.
In 2020 the world felt the uncomfortable sting of the pandemic and the insecurity of resources it brought. Even within our own family, it brought about heartache and fear for the elderly. To help my family and keep the ones who are at-risk safe. I decided to water bath canned food for them to enjoy leisurely. Nothing compares to fresh tomato sauce or flower jellies to brighten up a meal definitely in the winter months. This got me thinking about how so many others share an interest in flowers and preservation, and maybe they don’t have the guidance of a Carol
or a grandma like mine. So I created The Water Bath Community

Chapter 1
What is Water Bath Canning?
Have you ever heard the term water bath canning? Or it could be termed hot water bath canning. So what is it? It is the process of using hot water from your bathtub to make food safe. Wait, that doesn’t exactly sound right. Let me try that again. Water bath canning is one of many different types of food preservation. This process is for acidic foods with a pH below 4.6. Upon completion of a tested recipe, you will pack your sterilized glass canning jars full accordingly and secure the lids and rings. The jars are then placed into the canning rack and lowered into the water bath canner sitting up flat with all pots emerging in the water, covered with 2 inches of water, and processed accordingly. Water bath canning uses the pressure from boiling water to preserve food within glass jars, preventing harmful bacteria from growing on the food.

Safety Tips For Water Bath Canning
Let’s begin this talk about food safety. To have delicious jellied products, we must also be educated about the dangers. Clostridium botulinum is an odorless, tasteless bacteria that can cause a deadly type of food poison. These spores can live for years in your jar of food. The canning environment is the ideal growth place for spores. I’m talking about low-acid foods with a pH higher than 4.6, added moisture such as oxygen, and not using proper boiling water temperature. We might as well stick food in a jar, seal it and wait to see the forest that
