DECADENT CAKES
This chapter contains the essential dessert for every celebration. All the crowd-pleasers are present: luscious moist cakes that will impress your guests, delicious cupcakes to wow the little ones and holiday treats to be enjoyed by the whole family at special times.
These gorgeous cakes and cupcakes are my more wholesome and nourishing takes on the classics, which still taste so rich and indulgent that you’ll fall in love with them. There is The Chocolate Cake, as I call it—a vegan version of our childhood favorite chocolate cake with chocolate frosting. The Strawberries and Cream Cake is a light, dreamy summer dessert smothered in whipped coconut cream and fresh juicy strawberries. The Best Vegan Tiramisu features layers of fluffy, rich chocolate cake infused with aromatic black coffee and luscious cashew cream, beautifully balanced with a dark intense cocoa layer. I couldn’t ask for more!
Vegan baking can be challenging, and you might think that baking an amazing cake without using conventional ingredients like eggs, milk, butter and bleached wheat flour isn’t possible. But let me prove you wrong. Nature gave us so many wholesome ingredients that can be used to make cakes that are just as good or even better than their traditional versions.
To make it easier for you guys, the list of ingredients I used in all these cake recipes is more or less the same in each one, with an odd ingredient thrown in here and there. After you’ve made your first shopping haul, you will be set; there will be no need to run to the store for every cake you decide to make because you’ll probably have all the ingredients already stocked in your pantry.
