    According to renowned French geography professor Jean-Robert Pitte, unique to France are micro-climates that are very diversified; integrating the Alpine, Mediterranean, and Atlantic agricultural components.² Pitte asserts that geography, among other factors, plays a significant role in enhancing the formation of gastronomy excellence, and particularly the cultural heritage of French gastronomy.

    Brittany, as a province, may best be described as an area with few large towns, but rather more seaports and small villages. In Brittany, the town of Brest is a picturesque countryside village with wildflowers in bloom, thatched roof seaside cottages, small winding roads and medieval landmarks. Most of all, one is struck by the beauty of the ocean, the large sailboats and the many granite islands that belong to those fortunate enough to call Brittany home. Bretons gleefully spend holidays along the coast, and inland along the abers, relaxing at the beach and fishing. The bounty of the sea produces crab, shrimps, cockles, lobster and clams.
