If coffee is the soul of Gilmore girls, then Pop-Tarts are their hearts. Pop-Tarts are one of the most iconic foods in Gilmore world, and we’re very excited to include this recipe in the second Eat Like a Gilmore cookbook. These Homemade Pop-Tarts are so yummy, they may redefine your entire existence, just like they did for Lorelai. The very first time she tasted a Pop-Tart it changed her whole outlook on life and inspired her to be the Lorelai Gilmore we all know and love. And if you find yourself in need of a pregnancy test, throw some Pop-Tarts on a plate with an apple in the middle and see which one you crave. If it is the apple, you may have your very own Rory in the oven. But if a Pop-Tart calls to you, it’s just a normal day in the life of a Gilmore Girl.
For crust:
For brown sugar cinnamon filling:

Prepare pan and oven: Set out a baking sheet and cover with parchment paper or a silicone mat. Set aside. Ensure oven rack is in center position. Preheat oven to 350°F.
Brown butter: Place butter in small saucepan over medium heat. Once butter melts, let it continue to cook until it turns a medium caramel brown. Butter will foam. Once the foam begins to disappear, the butter will be the correct color. Remove from heat.
Mix dry ingredients: In a medium bowl, combine flour, almond meal, baking soda, and salt. Set aside.
Mix wet ingredients: In a large bowl, combine coconut oil with 2 tablespoons brown butter. Add corn syrup and sugar; stir with fork to combine. Whisk in egg, then
