American consumers show a high level of awareness of the relationship between their diets and serious diseases such as heart disease and cancer. (Derby and Fein, 1995). Public health campaigns, along with growing media attention to diet and health topics have raised awareness among less educated as well as the more educated consumers (Ippolito and Mathios, 1996).
This study will provide an up-to-date picture of the degree to which three groups of African American women are meeting dietary recommendations. The women in the study will be grouped according to age, income and education. They will complete a survey concerning their dietary habits. This study was designed in hopes that it would contribute to the evolving literature concerning the factors that promote general poor health among African American women.
Christine Dial-Benton
Dr. Christine J. Dial-Benton grew up with eight (8) loving brothers and sisters in Uniontown, Alabama. Her parents played a significant part in her ability to develop a strong voice. She earned degrees from Alabama State University, BS degree; Nova Southeastern University, MS degree, and the Union Institute University, PhD. Her studies are in exercise, health, and fitness (minor-English). Dr. Dial-Benton has taught physical education and health in Miami, Florida; Perry County, Alabama; Montgomery, Alabama; and Decatur, Georgia. She was coach for a chess team that won in Florida State tournaments several times. She also coached girls’ basketball and volleyball while teaching in Alabama. English is another subject she taught. Dr. Benton-Dial has two children and one grandchild. She is now living in Montgomery, Alabama, and is devoted to serving the Lord Jesus Christ.
