In 2016, 8% of American consumers were following a wheat-free or gluten-free diet. Gluten-free appears to be here to stay with new products hitting the grocery store shelves, more restaurants offering gluten-free menus, and more food manufacturers throwing a gluten-free label on foods that should not contain gluten.
