    What Is Meant by Yield?

    The word yield means the pounds of dry extract obtained from the materials used.

    a. Explain meaning of yield on extract basis.

    Yield calculated on the extract basis is derived from a table of average extract produced from 100 lbs. of each material, i.e.,

    The above simply means that for each 100 lbs. of material used the corresponding number of pounds are actually extracted. This figure can therefore be expressed on the percentage basis. As an example, malt with an average yield in the brewery of 63% means that for each 100 lbs. of malt used, only 63 lbs. of extract are produced.

    Since beer cannot be brewed without malt, the yield of malt is usually the basic factor in determining the yield of various materials used in a brew. Any extract in the wort in excess of the malt yield must necessarily come from the other materials. Therefore total extract yield means the sum total of extract obtained from all materials used.

    b. Explain meaning of yield on material basis.

    Yield calculated on the material basis represents the percentage figure derived by dividing the extract produced by the total amount of materials used. This figure would then represent the combined yield of all
