About this ebook

Tis sad and totally unjustified that such a creature as the Haggis can only be given reference by ‘sassenachs’ as a ‘dish’ on the table to satisfy the palate.
Or argued; could a ruminating quadruped (Haggis) be classed as a pest in the same way as a rat, weasel, pine martin or indeed, the mouse?
This intriguing question was settled by the Laird of Dinnet, just before his commitment.
What a sad, lamentable state of affairs indeed.
Being a proud Scotsman, I will have none of it, and have decided to give a true, in depth account of this much-maligned, miss-understood, fine creature owre the Glens.

    The Haggis - Cuger Brant

    Introduction

According to the 1897 (English) edition of Mrs Beeston’s famous cookery book, the dish ‘Haggis’ is described as; a savoury pudding of minced haggis, oatmeal, suet, spices, and salt, mixed with stock, traditionally encased in a sheep’s intestine, which, like any animal’s intestine, can be stretched to singularly large proportions due to its tensile elasticity.

Although its description is not immediately appealing, haggis has an excellent ‘nutty’ texture and a delicious savoury flavour.’

Personally, I find it sad and totally unjustified that such a creature as the haggis can only be given reference to by the Sassenach as a… ‘dish’ on the table to satisfy the
