    BACON BITES

    2 1/2 c. garbanzo flour

    1 egg

    1/4 c. broth or water, as needed, add gradually

    2-4 pieces of low sodium bacon, cooked and finely crumbled

    1/2 c. cheddar cheese, shredded, optional

    1/4 t. vitamin E oil or vitamin C powder

    Preheat oven to 325 degrees.  In a large bowl, place dry ingredients.  Mix and make a well.  Add wet ingredients into the well and mix until thoroughly combined.  Add bacon (and cheese).  Knead slightly and roll dough out onto a floured work surface to 1/2" thickness.  Cut dough into desired shape using a cookie cutter.  Repeat until all dough is used.  Place on a greased cookie sheet, parchment paper or silicone baking mat with baking pan. 

    Bake for 10 minutes on one side and 10 minutes on the other side.  Leave in the oven for at least 2-3 hours or preferably overnight.  Cool on a wire rack until hard and crunchy.

    * If dough is sticky, add more flour
