SNACKS & SIDES
SPINACH & QUINOA SIDE SALAD
Ingredients
FOR BOTH
2 ½ cups fresh spinach leaves
1 cup cooked quinoa* (any variety, but red or tricolor will look best!)
¾ cup crumbled feta
FOR HUMANS
Extra virgin olive oil
Balsamic vinegar
Coarse ground sea salt
Preparation
FOR HUMANS
1. Add spinach to a salad bowl and drizzle olive oil over the leaves.
2. Top with the cooked quinoa and sprinkle feta over salad.
3. Splash the balsamic vinegar on top, and finish with the coarse ground sea salt if desired.
FOR CATS
1. Remove excess stems and chop the spinach into medium pieces, then add to a cat bowl.
2. Top with cooked quinoa and sprinkle with a small amount of well-crumbled feta.
COOKED QUINOA*
Quinoa is generally cooked at a 2:1 liquid:quinoa ratio. Your quinoa will be more flavorful if you use chicken broth instead of water for at least half of the liquid. I use it for all 2 cups! (Make sure to use pure chicken broth without seasonings like onion or garlic powders since kitty is eating
