Lemon mousse with amaretto
We’ve used Greek yogurt to make a creamy, but zingy dessert.
Serves 4 • Prep 15 mins • Cook 15 mins, plus chilling
Zest 3 lemons
80ml fresh lemon juice (about 3 lemons)
175g caster sugar
20g low-fat spread
3 medium free-range eggs, beaten, plus 1 extra egg white
250g low-fat Greek yogurt
1tbsp amaretto
2 amaretti biscuits, crushed
