Heavenly low-cal DESSERTS

Mango and passion fruit parfait

A refreshing, reduced-fat ice with no cooking or machine required.

SERVES 8 PREP 30 mins, plus freezing

✱ 3 large ripe mangoes, around 1.5kg, plus extra to decorate
✱ 4 passion fruit
✱ 4 medium egg yolks, plus 1 egg white
✱ 150g caster sugar
✱ 125g reduced-fat double cream
✱ 125g 0% Greek yogurt
✱ 1tbsp pomegranate seeds, to serve

YOU WILL NEED

✱ 900g loaf tin, oiled, then double-lined with cling film to hang over the sides
