Chilled Mexican Avocado Soup GF VG

Visit your local food court and you'll find yourself staring down the barrel of guacamole, salsa and two limp iceberg lettuce leaves. To recreate the authenticity of traditional Mexican cuisine, this healthy version of chilled avocado soup will deliver those flavours you love so dearly minus the garbage.

Serves: 4

2 avocados, ripe, pitted, peeled & mashed
2 tbsp extra-virgin olive oil
1 brown onion, chopped
3-4 cups homemade vegetable stock
½ cup almond milk
Juice 1 lemon
1 tbsp lemon rind
1 tsp paprika
½ tsp ground cumin
Pinch cayenne pepper
1 garlic clove, crushed
Celtic sea salt
Freshly ground pepper, to taste
Avocado & corn kernels, to serve
Parsley, to garnish

1. Sauté onions in olive oil until browned.

2. Place all ingredients in a food processor and blend until combined.

3. Place in bowl, top with corn, avocado and parsley. Chill until served.

Corn Chip Taco Salad GF

This is a fun and quirky twist on a traditional taco salad that incorporates corn chips for extra crunch.

Serves: 2-4

400g beef mince
3 tbsp taco seasoning
½ head of iceberg lettuce, shredded
1½ tomatoes, diced
1 cup black beans, drained & rinsed
1 cup grated cheddar cheese
1 cup corn chips, crushed or broken into pieces
1 avocado, sliced into strips
½ cup diced red capsicum
¼ cup chopped fresh coriander (optional)
Lime/lemon, to taste
Sour cream, to taste

1. In a pan on a medium-high heat, cook the mince until browned and any excess liquid has evaporated. Drain any excess fat and mix in the taco seasoning.

2. In a large salad bowl, layer the shredded lettuce as the base.

3. Top the lettuce with the cooked and seasoned meat.

4. Add the tomatoes, black beans, cheese, chips and capsicum.

5. Garnish with fresh coriander if desired.

6. Serve with lemon or lime juice and sour cream as a dressing. Allow everyone to mix their salad as they prefer.

Tip: Add in some chopped jalapenos for a bit of an extra kick.
