Refried bean quesadillas

Heat 1 tbsp sunflower oil in a large frying pan over a medium heat. Cook 1 finely chopped onion and 2 finely chopped garlic cloves for 2 mins, until softened and beginning to brown. Add 1 tsp cumin seeds and cook for 1 min more. Tip in a 400g can kidney beans, 2 tsp smoked paprika and a splash of water. Mash the beans as they warm to make a rough purée. Season, then spread them over 4 flour tortillas and scatter over 100g grated cheddar or gruyère and a handful of coriander. Spoon over 200g fresh tomato salsa, then top with 4 more tortillas. Wipe the frying pan and return to a medium heat. Cook for 1-2 mins on each side, until golden.

Heat 1 tbsp vegetable oil in a large frying pan. Cook and over a high heat for 8-10 mins, turning often so they brown all over. Add to the pan with .
