Watermelon cocktail

I think watermelon is the best summer fruit. You can do so much with it, and it awakens in each of us a nostalgic story about the season. One day, when I realise my dream of retiring in Mauritius and opening a small South African restaurant there, this drink will be the star of the cocktail menu.

Serves 6

Preparation time 10 minutes, plus chilling time

YOU NEED

3 thick watermelon rings¼ cup (60 ml) brown sugar150 ml gin or vodka (25 ml per drink)300 ml litchi juicejuice and grated zest of 3 limes or lemons1 kg crushed icemint leaves to garnish

THIS IS HOW

Peel the watermelon, place the flesh in a food processor with the sugar and blend on high until smooth. Pour the mixture through a sieve to remove the seeds and pulp, then place in the fridge to chill. Add the gin or vodka, litchi juice and lime or lemon juice and zest to the cold watermelon juice and stir well. Fill 6 glasses of your choice with crushed ice. Pour in the watermelon cocktail, garnish with fresh mint and serve immediately.
