Sweet Side of Rice

Bananas Foster Baked Rice Pudding

MAKES 6 TO 8 SERVINGS

1 cup Arborio rice
½ cup sugar
½ teaspoon kosher salt
¼ teaspoon ground cinnamon
3½ cups whole milk
⅓ cup heavy whipping cream
1 tablespoon dark spiced rum
Caramelized Bananas (recipe follows)

1. Preheat oven to 350°. Lightly spray a 2-quart baking dish with cooking spray.

2. In a medium bowl, stir together rice, sugar, salt, and cinnamon. Stir in milk, cream, and rum. Pour mixture into prepared pan.

Bake for 30 minutes. Gently stir with a wooden spoon, breaking up the skin that has formed
