INGREDIENTS
■ 125g dried buckwheat soba noodles (or any other noodle of your choice)
■ 100g sugar snap peas
■ 2 green or purple endive (250g) (or replace with cabbage if unavailable)
■ 200g sprout mix
■ 1 large avocado (320g), quartered
■ 1 bunch baby carrots (400g), trimmed
■ 120g red cabbage, shredded finely
■ 4 radishes (140g), sliced thinly
■ 1/2 cup (20g) pea sprouts
■ 1 teaspoon black or white sesame seeds
LEMON-CASHEW DRESSING
■ 1/2 cup (75g) raw cashews
■ 1 small clove garlic, crushed
■ ¼ cup (60ml) lemon juice
■ 2t extra virgin olive oil
PICKLED SEAWEED
■ 20g dried seaweed
■ 3 cups (750ml) boiling water
