QUICK & LAZY DRENCHED COLD NOODLES

INGREDIENTS
• 100g/4oz flat rice noodles or cooked ramen noodles
• 1 small round shallot, peeled and sliced
• 2 tbsp rapeseed oil
• 2 tsp toasted sesame seeds
• 2 tbsp crispy chilli oil (Lao Gan Ma or Pippy Eats)
• 2 tbsp light soy sauce
• 1½ tsp maple syrup
• 1 tsp black vinegar or cider vinegar
• 2 tsp sesame oil
• A handful of coriander leaves (around 20g/¾oz)
• 25g/1oz garlic chives (optional)
• 2 cloves garlic, peeled and roughly sliced
• 2 tsp hot Maggi liquid seasoning (optional)
