Burns Night supper

here’s something so joyous about connecting food with a celebration or event. When I think of Burns supper, my brain immediately goes to haggis, whether it be a meat-based haggis or a lovely oaty, nutty, spiced vegetarian haggis. There will forever be room in my eating repertoire for haggis and neeps and tatties, but why not try something a little different this year? I’ve still included haggis in this menu, but instead of being the main dish, it’s stuffed in Balmoral chicken and served with potato cakes and lemony kale. When cooking for friends, the simplicity of the task is non-negotiable for me – I want to be able to speak to my friends and enjoy their company. These Burns supper recipes can all be prepped in advance, meaning that you can haphazardly attempt ‘Address to a Haggis’ or read some of the beautiful poetry by the talented Scottish female poet, Liz Lochhead, while sipping on a neat, delicious dram of whisky.
