TAMARIND GINGER MARGARITA

My friend Marcus from Goa always kindly gives me the greatest tamarind paste whenever we meet, and it’s one of my all-time favourite flavours. I love its sour fragrance and use it endlessly in recipes alongside citrus and ginger. While this cocktail may sound mild, the flavours ripple and burst – and that gingery salt rim is a gorgeously tasty glittering constellation!
