WATERCRESS SOUP WITH AN EGG

Add some protein to your soup with this quick and easy recipe.

Serves 2
Prep time 10 minutes
Cook time 20 minutes

Ingredients

• Olive oil
• 1 shallot, finely chopped
• 1 large potato, approx. 150g, chopped small
• 60g watercress
• 30g spinach
• 50ml crème fraîche
• Salt and pepper
• 2 eggs
