LEMON and HERB BUTTERFLIED CHICKEN

SERVES 6-8 / PREPARATION: 15 MINS / COOKING: 50 MINS

› 1 whole chicken, gizzards removed
› salt and pepper
› 125ml (½c) plain yoghurt
› 60ml (¼c) olive oil
› 60ml (¼c) lemon juice
› handful fresh
› coriander, finely chopped, plus extra sprigs to garnish
› handful fresh parsley, finely chopped
› 125ml (½c) sundried tomatoes, finely chopped
› 4 cloves garlic, minced

Preheat the oven to 180°C on the grill setting.

1 Butterfly the chicken. Place the chicken on the kitchen counter on its back. Using a sharp kitchen knife or kitchen scissors, cut open the breast. Turn over the chicken and, using the palm of your hand, press down on the back to flatten it.

Place the chicken in a large roasting pan, and season.
