PRETTY IN PINK

FOR BREAKFAST

CREPES WITH NECTARINES

MAKES 4-6 CREPES PREPARATION: 20 MIN STANDING: 30 MIN COOKING: 30 MIN

CREPES

2 eggs, beaten
125ml (½c) milk
30ml (2T) water
125ml (½c) cake flour
1ml (¼t) baking powder
a pinch of salt
a few drops of pink food colouring

SYRUP

juice and grated zest of 1 lemon
juice and grated zest of 1 orange
30-60ml (2-4T) sugar
15ml (1T) butter
a pinch of salt

TO FINISH

a little oil, for frying
2 nectarines, pitted and sliced
1 red plum, pitted and sliced
icing sugar
vanilla ice cream or sweetened cream

Keep a nonstick pan handy.

1 Crepes Beat the eggs, milk and water together until well combined. Mix the flour, baking powder and salt in a mixing bowl, then make a well in the middle. Pour the milk mixture in and mix until you have a smooth batter.

2 Colour the batter with the food colouring to a shade of your liking, and leave to stand for 30 minutes.
