Cod and Green Rice

WHAT’S NOT TO love about a one-skillet meal? Not only are these recipes often streamlined for ease of cooking and cleaning, but because everything cooks together, the flavors get a chance to hang out, meld, and deepen. Such is the case with this knockout recipe for tender, mild cod cooked with deeply seasoned rice.

Rice, of course, is native to Asia, but there has been no turning back since Europeans introduced it topinnacles of Mexican rice cooking is arroz poblano/arroz verde, or green rice. It’s typically made by cooking the rice in some combination of chopped or pureed green peppers (commonly poblanos and jalapeños), cilantro, onion, garlic, and broth. This recipe takes inspiration from green rice and adds cod to the mix for a satisfying, light, bright meal.
