½ large cauliflower, cut into small florets (about 500g)
2 tablespoons olive oil
1 brown onion, thinly sliced
3 cloves garlic, crushed
1 teaspoon ground cumin
1 tablespoon fresh thyme leaves
300g can corn kernels, drained, rinsed
1 reduced-salt chicken stock cube, crumbled
⅓ cup finely grated parmesan
4 eggs
1 tablespoon finely chopped fresh chives
