JAZZ APPLE SCONES WITH SOFT FRUITS

Makes 6-8 Takes 30 minutes

INGREDIENTS

• 225g/8oz self-raising flour
• 50g/2oz butter, at room temperature, plus extra for greasing
• 4 tbsp golden caster sugar
• 1 Jazz apple, cored and finely diced
• 50g raspberries, finely chopped
• 125ml/4½fl oz milk
• 1 egg, beaten
• Fresh strawberries and clotted cream, to serve

1. Preheat the oven to 180°C, fan 160°C, gas 4. Lightly grease a baking tray with the extra butter and set aside.

2. Add the flour and butter to a bowl and, using your fingers, rub together until the consistency resembles breadcrumbs.
