Banana bran breakfast loaves

SERVES 8 PREP + COOK TIME 40 MINUTES

100g dark chocolate chips (see note)

DRY

125g plain flour
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
½ teaspoon salt
60g bakers bran (wheat bran)

WET

150g golden syrup
50g canola oil
350g (approx 3) mashed bananas, plus 1 extra, sliced for topping
2 eggs
150g natural or Greek yoghurt

1 Preheat oven to 185°C/165°C fan. Line an 8-hole mini loaf tin with strips of baking paper or generously spray with oil.
