Fruit pulp muffins

MAKES 9-12

375g (13oz) plain flour
190g (6¾oz) caster sugar a pinch of salt
2 tsp baking powder
80ml (2¾fl oz) vegetable oil
1 free-range egg
80ml (2¾fl oz) milk
150g (5½oz) fruit pulp

1 Preheat the oven to 200°C/Gas Mark 6. Line a muffin tin with paper cases.

2 In a bowl, combine the flour, sugar, salt and baking powder.

3 In a separate bowl, combine the oil, egg and milk. Whisk together, then pour the liquid over the dry ingredients.

4 Add the pulp and any extra fruit – blueberries and strawberries work really well. Stir to combine the ingredients evenly.

5 Pour the mixture into the muffin cases, then bake for 25 minutes or until cooked through.
