Allergy friendly chickpea brownie

MAKES 9 PIECES PREPARATION 25 MINUTES COOK 45 MINUTES

This brownie allows so many people with aversions and allergies to delight in our talent

400g can chickpeas
125g coconut milk
125g dairy-free butter substitute
1 tsp vanilla extract
200g soft brown sugar
60g almond meal
60g Dutch cocoa
½ tsp baking powder
100g gluten-free flour
150g chopped 70% dark chocolate, plus extra for topping
Dutch cocoa or icing sugar, to dust

1 Preheat oven to 160°C. Prep an 18cm square baking tin with baking spray and line it with baking paper.

2 Drain the chickpeas. Put the drained chickpeas and coconut milk in a blender and blend until you have a smooth paste.
