CHEAT’S SAUSAGE CASSOULET
SERVES 4 PREP AND COOK: 40 MINS
500g thick pork sausages
Olive oil cooking spray
1 tblsp extra virgin olive oil
1 medium onion (150g), chopped finely
2 bacon rashers (160g), sliced thinly
2 cloves garlic, crushed
1 medium red capsicum (200g), chopped coarsely
1 medium zucchini (120g), chopped coarsely
250g baby roma tomatoes
½ cup (125ml) dry red wine
1½ cups (390g) tomato pasta sauce
3 sprigs fresh thyme
400g can butter beans, drained, rinsed
1½ cups (105g) coarse fresh sourdough breadcrumbs
⅓ cup (25g) grated gruyère cheese
⅓ cup chopped fresh flat-leaf parsley
Sea salt flakes, to serve
1 Preheat a 7-litre air fryer to 200°C for 3 minutes.
2 Spray sausages with cooking spray. Carefully place in air fryer basket. At 200°C, cook for 8 minutes, turning halfway through cooking, or until browned.
Meanwhile, heat oil in a large frying pan over medium-high heat. Cook onion and bacon, stirring, for 5 minutes or until onion is softened and bacon is crisp.
