KOREAN-STYLE SLOPPY JOES
Preparation time 10 mins
Cooking time 40 mins
Makes 6
¼ cup vegetable oil
500g beef mince
2 tsp sesame oil
2 brown onions, diced
8 cloves garlic, crushed
10cm piece ginger, minced
½ cup gochujang (see Cook’s tip)
½ cup light soy sauce
¼ cup mirin (or chicken stock)
Finely grated zest and juice of 1 lemon
1 Tbsp dark brown sugar
4 shallots, very finely sliced
1 Tbsp toasted sesame seeds, plus extra, to serve
6 soft brioche buns
Shaved cucumber, shaved radishes, finely sliced capsicums, fried eggs and kimchi, to serve
STEP 1 Heat half of the vegetable oil in a large frying pan on high. Cook beef mince for 5 minutes, stirring, until browned, then remove and set aside. Add remaining oil and sesame oil to the pan and cook onion, garlic and ginger for 5 minutes until softened.
Return beef mince to pan and add gochujang. Cook
