Corn, green chilli and coriander buttermilk pancakes

While you can use fresh or frozen corn kernels, fresh gives the pancakes a little bit of crunch and more flavour, which I love!

MAKES 12 PREP 10 mins COOK 30 mins

✱ 165g gluten-free self-raising flour✱ ¼tsp bicarbonate of soda✱ ½tsp salt✱ ¼tsp cracked black pepper✱ 2 medium eggs✱ 350ml buttermilk✱ 25g unsalted butter, melted, plus extra for cooking✱ 300g sweetcorn, fresh, tinned or frozen and thawed✱ 1 large spring onion, thinly sliced✱ 1 large green chilli, finely chopped✱ ¼
