Pork with Apple Mustard Gravy and Sauerkraut

■ 500g small baby chat potatoes
■ ¼ cup olive oil
■ 4 x 200g pork mid loin chops
■ 1 cup beetroot sauerkraut (see Tip)
■ Steamed snow peas, to serve
APPLE MUSTARD GRAVY
■ 1 tblsp plain flour
■ 1 cup chicken stock
■ 1 tblsp wholegrain mustard
■ 2 tblsps bottled apple sauce
