Pork with Apple Mustard Gravy and Sauerkraut

SERVES 4
PREP & COOK 25 MINS

500g small baby chat potatoes
¼ cup olive oil
4 x 200g pork mid loin chops
1 cup beetroot sauerkraut (see Tip)
Steamed snow peas, to serve

APPLE MUSTARD GRAVY

1 tblsp plain flour
1 cup chicken stock
1 tblsp wholegrain mustard
2 tblsps bottled apple sauce

Rinse potatoes. Pierce each with a fork. Place in a large, microwave-safe cooking container. Cover with lid. Microwave on High (100%) for 6 to 8
