• 4 little gem lettuce, halved lengthwise• Glug of olive oil• 1 lemon, sliced into 1cm discs• 150g petits pois• 100ml vegetable stock• 15g mint leaves• 1 tbsp chopped hazelnuts (optional)• 2 tbsp labneh• Sea salt
