Fresh tortellini

2⅔ cups (400g) ‘00’ flour,
plus extra for dusting

coarse semolina, for dusting
FILLING
20g butter
150g minced pork
100g mortadella, chopped
100g thin prosciutto slices, chopped
1 cup (80g) finely grated parmesan
1 egg
pinch of finely grated nutmeg
Process flour and eggs in a food processor until a dough starts to form. Tip onto a lightly floured work surface;
