2⅔ cups (400g) ‘00’ flour,
plus extra for dusting
4 eggs
coarse semolina, for dusting

FILLING

20g butter
150g minced pork
100g mortadella, chopped
100g thin prosciutto slices, chopped
1 cup (80g) finely grated parmesan
1 egg
pinch of finely grated nutmeg
