DULSE AND SHIITAKE MUSHROOM DUMPLINGS WITH MISO GINGER BROTH
In a fragrant miso ginger broth, freshly made dumplings are filled with a blend of dried dulse, carrots, garlic, shiitake mushrooms and soy sauce. When you bite into each dumpling, you get a burst of delicious, rich umami flavours.

Ingredients
Miso & ginger broth
• 2 large thumbs of ginger, sliced• 4 spring onions, roughly chopped, plus extra to serve• 4 cloves of garlic, roughly chopped tsp star anise tsp cloves tsp pepper• 1.5 litre water• 1 tbsp soy sauce• 1 tbsp rice vinegar• Salt to taste• 2 tbsp brown miso paste• Chilli oil, to serve
