Massaman sausage curry

SERVES 6 PREP + COOK TIME 45 MINUTES

2 tablespoons peanut oil
12 (1kg) good quality beef or lamb sausages
2 large (400g) brown onions, cut into thin wedges
⅔ cup (200g) massaman curry paste
1 cup (250ml) coconut milk
2 cups (500ml) chicken stock
2 cinnamon sticks
3 medium (600g) potatoes, peeled, chopped
2 tablespoons brown sugar
1 tablespoon fish sauce
⅓ cup loosely packed fresh coriander leaves
2 tablespoons crispy fried shallots
2 tablespoons unsalted peanuts, roasted steamed rice, roti or naan bread, optional, for serving
