Japanese beef taco rice

SERVES 6 PREP TIME COOK TIME 25 MINUTES

2 tablespoons extra virginolive oil500g beef mince1 teaspoon ground chilli1 teaspoon ground cumin1 teaspoon ground coriander1 teaspoon sweet paprika1 tablespoon finely grated fresh ginger1 clove garlic, chopped finely2 tablespoons soy sauce2 teaspoons shiro miso (see tip) dissolved in 300ml boiling water steamed short-grain (sushi) rice, to serveiceberg lettuce wedges, coarsely grated cheddar, green onions and coriander leaves to serve

SPICY SALSA

150g cherry tomatoes, coarsely chopped50ml rice vinegar1 tablespoon
