ALMOND BERRY BAKED OATS

PREP 5 MINS COOK 40 MINS SERVES 6 (AS A DESSERT)

140g (1½ cups) rolled oats
450ml boiling water
2 tsp vanilla extract
225ml unsweetened almond milk, plus extra, to serve (optional)
1 large very ripe banana, mashed until smooth
190g (1¼ cups) frozen mixed berries
1½ tbsp flaked almonds, toasted (see Cook’s tip)

1 Preheat oven to 170°C (fan-forced). Put the oats in a medium heatproof bowl and pour over the boiling water. Stir well. Stir in the vanilla extract and the 225ml almond milk.

2 Spread the banana over the base of a medium baking dish. Add the frozen fruit and stir to combine. Pour the oat mixture over the berries. Scatter over the almonds.
